I'm gonna leave this open in case anyone else has this issue and I'll try to go through what I did to fix it.
Is there any kind of fix for this on an M1 Mac, or did I waste my money on a product that simply does not work as intended? So there's literally no way for me to fix this problem if there's no tab for it anywhere. And when checking the settings, there is no way to change the audio to "analog" (which is what was recommended for me to do). As soon as it is, I can see the sound bars on the capture software disappear, and this has happened in \three** different pieces of software (OBS, Streamlabs, and Game Capture HD). Sound is only captured when the Chat Link isn't connected. I tried uninstalling and reinstalling software, changing the port I plug the capture card into, but nothing works. Audio works whenever I stream anything on PS4 or Switch… unless the Chat Link Pro is plugged in, then the sound cuts out entirely. So I have an M1 Mac mini, an HD60 S+ capture card, and a Chat Link Pro.
